CANTALOUPE SMOOTHIE

- 1 ripe banana
- 1/4 ripe
cantaloupe
- 1/2 cup nonfat or
low-fat plain soy yogurt
- 2 tablespoons
skim milk powder
- 11/2 tablespoons
orange juice concentrate
- 2 teaspoons honey
- 1/2 teaspoon pure
vanilla extract

- Place unpeeled
banana in freezer overnight or for up to 3 months. Remove banana from
freezer and let it sit for 2 minutes, or until skin begins to soften.
- With paring
knife, remove skin. Cut banana into chunks and put in blender or food
processor.
- Seed cantaloupe
quarter and cut flesh from rind. Cut flesh into chunks and add to blender.
- Add remaining
ingredients and blend until smooth.
- Yields 1 serving.
