Cruciferous Cancer Fighters In 80 percent of studies, cruciferous vegetables protect against a score of cancers, particularly of the lung, stomach, and colon. This family of veggies, which includes broccoli, Brussels sprouts, kale, cabbage and cauliflower, is rich in sulforaphane, a potent chemical that gives them their bite. Onions, garlic, leeks, chives and scallions are reputed to have anticancer properties because of their sulfur compounds, too. Sulforaphane works by boosting enzymes that detoxify cancer causes before they can damage DNA, suppressing the activity of enzymes that promote cancer and interfering with tumor growth. Potency note: Broccoli sprouts are loaded with up to 100 times more of a sulforaphane precursor compared to mature broccoli.
