Middle Eastern Fattouch
Salad
Makes 4-6 servings
- 1 cup (250 mL)
chopped fresh assorted herbs (parsley, chives, cilantro, dill, mint)
- 1 red pepper,
diced
- 2 medium
tomatoes, diced
- 2 cups (500 mL)
diced English cucumber
- 1/2 cup (125 mL)
diced red onion
- 2 small pitas,
preferably whole wheat, toasted, cooled and broken into large pieces
- 4 teaspoons (20
mL) extra virgin olive oil
- 2 tablespoons (25
mL) fresh lemon juice
- Salt and freshly
ground pepper
Mix, serve, and
enjoy.
