Salmon with Roasted Pepper Sauce & Garlic Mashed Potatoes

Grilled
Salmon
Serves 4, 135
calories per serving
Ingredients:
- 4 Three ounce
portions Atlantic Salmon
- 1 tsp Salt
- ½ tsp Black
Pepper, ground
- 1 tbsp Fresh
Dill, finely chopped
- Juice of one
Lemon
- No-Stick Cooking
Spray
- ½ cup Zucchini,
cut lengthwise, steamed
- ½ cup Carrots,
long strips, steamed
Instructions:
- 1. Bring two cups
water to a boil in a small pot. Add carrots for about 2 minutes, remove from
water and set aside. Add zucchini to boiling water for about one minute,
remove from water and set aside.
- 2. Prepare plate
with Roasted Red & Yellow Pepper Sauce and one cup of Roasted Garlic
Mashed Potatoes. Garnish with vegetables and lemon.
- 3. Coat grill
with cooking spray and heat on high setting until hot. Sprinkle seasonings
on salmon. Place salmon on grill and cook for about 5 minutes or until firm
to the touch. Remove salmon from grill and serve on prepared plate.
Garlic
Mashed Potatoes
Serves 4,

Ingredients:
4 cup Potatoes, medium diced
2 ½ cup Water
2 tsp Oil
1 tsp Garlic, roasted
1 tsp Fresh Dill, chopped fine
2 tsp Soy Milk [optional]
1 pinch Salt
Instructions:
1. Wash and peel potatoes.
2. Combine potatoes and water in a pot.
3. Bring to boil and cook until potatoes are soft.
4. Strain the water. Mash the potatoes with a mixer, adding the garlic, oil, soy
milk, dill and salt. Continue to mix until well blended.
Roasted Pepper Sauce
4 servings, 96 calories per serving.
Ingredients:
¼ tsp Olive Oil
3 Red Peppers, roasted
3 Yellow Peppers, roasted
¾ tsp Salt
2 dashes Garlic Salt
2 dashes White Pepper
½ tsp Garlic
2 cup Water
1 tbsp Olive Oil
Instructions:
1. Place ¼ tsp olive oil in the palms of your hands and coat peppers.
2. Place peppers on a large baking sheet and roast in 400-degree oven for 20
minutes, or until skin is blackened.
3. Let pepper cool and then remove the skin.
4. In a blender, add red peppers and half of the other ingredients. Blend until
consistency is smooth. Remove from blender and set aside.
5. Clean blender and add the yellow pepper and the remaining half of the
ingredients. Blend until smooth and set aside.
