The more
accessible vegetables are, the more likely you are to get into the habit
of eating them every day. Here are 10 ways to get started:
- Toss a
bag of baby carrots into your bag or briefcase, and nibble on them
throughout the day.
- Add
frozen vegetables to canned soup.
- Snow peas
and sugar snap peas add crunch and brilliant green color to salads.
First cook them briefly, and then refresh them under cold running
water.
- Top your
broiled chicken or fish with salsa.
- Buy
ready-to-eat, pre-washed salad greens for convenience.
- Keep your
kitchen full of vegetables that won't spoil quickly - onions, green
onions, garlic, potatoes, winter squash and carrots, for example.
- At a
salad bar, fill up your plate with salad greens first.
- The next
time you make pasta with vegetables, use half as much pasta and
twice as many vegetables.
- Microwave
asparagus (covered) with a squeeze of lemon for two or three
minutes.
- Eating
out or ordering in tonight? How about a side of broccoli with that?
Surveys in California reveal that when people eat foods prepared
outside the home, they average 25 percent fewer fruits and
vegetables - so make a special effort to include vegetables in your
order.
