The more accessible vegetables are, the more likely you are to get into the habit of eating them every day. Here are 10 ways to get started:
  1. Toss a bag of baby carrots into your bag or briefcase, and nibble on them throughout the day.
  2. Add frozen vegetables to canned soup.
  3. Snow peas and sugar snap peas add crunch and brilliant green color to salads. First cook them briefly, and then refresh them under cold running water.
  4. Top your broiled chicken or fish with salsa.
  5. Buy ready-to-eat, pre-washed salad greens for convenience.
  6. Keep your kitchen full of vegetables that won't spoil quickly - onions, green onions, garlic, potatoes, winter squash and carrots, for example.
  7. At a salad bar, fill up your plate with salad greens first.
  8. The next time you make pasta with vegetables, use half as much pasta and twice as many vegetables.
  9. Microwave asparagus (covered) with a squeeze of lemon for two or three minutes.
